Who's Thirsty? Cool down with our Ginger Green Tea Lemonade!

Hey there, Penny People...

Well, somehow it's August!

I hope you've been getting some beach/cottage/vacay time, despite this especially rainy summer we've been having in Nova Scotia. Today the sun is shining bright and I thought, what better day to share a favourite Lucky Penny recipe with you all?

This Ginger Green Tea Lemonade is perfect for picnics, backyard hangs, or packing up for a weekend road trip. You will love it!

Ginger Green Tea Lemonade

What you need:

1/4 cup loose leaf green tea, I like this one from World Tea House

3 cups nearly boiling water (around 85 degrees)

1/3 cup honey

2 TBSP coarsely grated ginger root

2/3 cup lemon juice (approx. 2 lemons)

Cold, still or sparkling water

Lemon slices & fresh mint for serving

What to do:

+ Steep the tea leaves & grated ginger in the water for 4 minutes. Make sure to time this, as over-steeping green tea can cause it to become bitter

+ Add the honey while the tea steeps

+ Once the tea & ginger have steeped, strain through a fine mesh strainer & add lemon juice

+ Chill in the fridge until cool

How to serve:

+ Pour your cooled concentrate over ice until 2/3 full & top with cold still or sparkling water

+ Garnish with lemon wheels & fresh mint from the garden

+ Feeling cheeky? Toss a shot of gin or vodka in there. (Shhhhh... we won't tell!)

Serving a crowd? Pour your concentrate into a jug or glass bottle & top with cold water - this recipe makes around 1 litre, but feel free to dilute to your taste!
