I don't know about you...but I woke up this morning with a serious case of the Mondays. You know what I mean. The laundry list of to-do's mixed with a dose of can I just sleep for another 10 hours?
When your week starts off on the wrong foot, we can end up in the never ending cycle of "I'm tired because I haven't eaten....and I haven't eaten because I'm tired". So, let's get ahead while we still can, shall we? Try this three simple tips to get your meal planning started tonight:
1. Boil those eggs! Ok, if you're not a big egg eater, you can skip this one. If I had a dollar for every time I've heard "I was in a rush, so I went through the drive-thru"....
Breakfast really can be as simple as a couple boiled eggs and a banana. Starting your day with a solid protein source can be the difference between happy and hangry at your 10:30AM meeting. Take a dozen eggs, boil them, and stick them right back into their container in the fridge. Early morning rush to work? No problem, grab those eggs and go!
2. Pre-pack your snacks. If you can carve out 15 minutes today, do this (maybe while those eggs are boiling?). I promise you will thank me later. Grab a few of the following: mixed nuts, fruit, crackers, cubed cheese, yogurt, granola, veggies, hummus, guacamole. Portion these out into small containers, like these. Portion out snacks for the next 3 days. These are going to be gamechangers when you hit that 3PM slump.
3. Get friendly with your sheet pan...or your airfyer. Before you can talk yourself out of it, open your fridge and take out whatever veggies you can get your hands on. Line a sheet pan, lay those veggies on there, drizzle some olive oil, sprinkle some spices, and pop 'er in the oven. Too much prep? No problem. Ditch the pan and throw those veggies into an airfryer. Your roasted vegetables can be the base or side of a handful of meals or snacks for the day. Healthy does NOT have to be complicated.
