Happy October - it's officially sweater weather...and more importantly...pumpkin season. Since Thanksgiving is right around the corner, I wanted to share this edition of the Fuss-Free Meal Planning Subcription with my whole Lifeberry family.
I couldn't create this collection of recipes without giving pumpkins some much-needed attention, right? I was never actually a huge fan of pumpkins growing up. Carving them - sure, what kid doesn't love carving a pumpkin! But I never got into the joys of eating them until very recently, and I haven't looked back! (Yes you read that correctly, I never jumped on the Pumpkin Spice latte wagon....but there's a recipe in this collection that definitely has me on board this year.)
Pumpkins are such a nutrient-rich food. They are rich in Vitamin A, a fat-soluble vitamin and antioxidant that supports immune health and eye health. They're also a good source of both Vitamin C and Vitamin E - two other powerhouse antioxidants that play a key role in skin health.
So, in honor of pumpkin spice latte season, I've put together some recipes that feature pumpkin in different forms and I really hope you get some time to play with pumpkins this month.
Given that Thanksgiving is also just around the corner, I figured I'd throw in some classic Turkey leftover meals for you to use because...we always have leftovers right?
